I was fortunate to attend a Dona Elena Cuisinera Club Cooking Demo at The Podium. I got to know some interesting facts about Mediterranean Diet which was discussed by Dr. Luchie Callanta. She explained why the people who live around the Mediterranean Sea (like Italians, Spanish, Portuguese, French, Greeks, Egyptians, etc.) consume foods that contain a lot of fats but they have lower death rates. It’s because they often use Olive oil in their food. Olive oil is rich in monounsaturated fats which reduces the risk of heart disease. Chef Golda Liamzon also cooked for us using Dona Elena Olive oil. Here are two of my favorite recipes that Chef Golda prepared which can serve as a viand and dessert.
STEWED CHICKEN IN COCONUT MILK
(serves 6 persons)
Ingredients:
1 pc. whole chicken, cut into pieces
1/2 up Dona Elena Pure Olive Oil
1 tablespoon garlic, minced
2 tablespoon ginger, julienne (shred into long, thin strips)
1 pc red onion, sliced
2 pcs green chili (siling haba)
500 mL coconut milk
20g chili leaves (dahon ng sili)
salt and pepper to taste
Procedure:
1. Heat the Dona Elena Pure Olive Oil in a saute pan and saute the onions, garlic and ginger until aromatic.
2. Add the chicken pieces and sear (brown) on all all sides.
3. Add the coconut milk and green chili and let simmer until chicken is well done.
4. 5 minutes before chicken is cooked, add the chili leaves and season with salt and pepper.
5. Serve with white rice.
